I’ve always been a big fan of yogurt with fruit and granola in the morning. Over the years I’ve learned that even the very best store bought granola can’t compete with homemade. It’s so much more economical and amazingly more delicious to make your own – and it honestly couldn’t be easier.

I have made lots of variations over the years, but this Maple Pecan granola is always a crowd pleaser, includes very few ingredients, which I always have on hand.

When I make granola, I tend to make a double batch to give away to friends. It always feels like a nice treat and makes a really lovely hostess gift

To make this granola, you will need rolled oats, maple syrup, chopped pecans, coconut coconut oil, vanilla and salt.

To begin, preheat your oven to 300°F and line a baking sheet with parchment paper. In a large mixing bowl, combine the rolled oats, chopped pecans and salt. Stir to combine everything evenly. In a separate bowl, whisk together the maple syrup, melted coconut oil and vanilla until well combined.

Pour the wet mixture over the dry ingredients and mix until everything is evenly coated. Spread the mixture onto the baking sheet in an even layer. Bake for 25-30 minutes until golden brown, stirring occasionally to ensure even baking.

Once the granola is baked, let it cool completely on the baking sheet. The granola will crisp up as it cools. Once cooled, transfer to an airtight container for storage. Serve with your favorite yogurt or milk and enjoy your delicious homemade maple pecan granola!

This granola is a breeze to pull together with just a handful of ingredients typically on hand. It is wonderful in yogurt parfaits and makes a lovely hostess gift. 


Ingredients

  • 3 cups of old fashioned oats (not quick oats)
  • 1/2 cup coconut oil
  • 1/2 cup maple syrup
  • 1/2 cup unsweetened shredded coconut 
  • 1 cup chopped pecans
  • 1/2 tsp vanilla 
  • 1/2 tsp cinnamon
  • 1/2  tsp salt 

Instructions

Notes

Once cooled, you can optionally add some mix ins like raisins or dried blueberries or cherries.
